Thyme to soothe

Thyme is one of our go-to herbs to help ease dry, scratchy throats thanks to its soothing and protective properties. In fact, New Zealand wild Thyme honey has one of the highest antioxidant ratings of any honey, anywhere.
Thymus vulgaris or common thyme is a well-known member of the mint family, botanically known as Lamiaceae. All the cousins in this family (rosemary, sage etc) have square stems, similar leaf arrangements, and often have amazing fragrances that make them popular in cooking. These potent aromas show the presence of essential oils in the plant.
The next time you feel a little tickle in your throat or are in need of a winter warmer, try this delicious herbal infusion.
Thyme & Honey Tea
Serves one
Ingredients
1.5 cups water
3 sprigs of fresh thyme
1 tsp wild Thyme honey or Mānuka honey
Method
1. Bring water to a boil in a small saucepan and then remove from heat.
2. Add the thyme, cover and allow to steep for 5 minutes.
3. Strain the liquid into a mug and stir in the honey until dissolved.
4. Sip and enjoy.
